How To: Boil Potatoes Faster

Only 20 minutes to get a warm, delicious side dish on the table? Want it to be easy and quick, but don't want to shake potato flakes or Rice-a-Roni out of a box? Have I got the solution for you!

Peel (or if you're like me, leave the skins on) and quarter about 3 cups of potatoes (new, red, Yukon, whatever you like), get that pot on the stove to a rolling boil, plunk in the potatoes, aaaand...

Add
• 2 tbsp. olive oil
• 1/2 tsp. salt
• 2 tbsp. balsamic vinegar

Yes, balsamic vinegar - That's it! It cuts the boiling time in HALF. If you don't have some already, just buy a cheap variety at the grocery store because this isn't about taste, it's about efficiency! And don't worry, the vinegar doesn't leave the potatoes with any kind of funky, unpleasant taste once you strain them. It's just as easy as that. They'll be done in about 20 minutes and reading for mashing.
